Perl Las is unlike any other blue, strong in taste yet delicate.
It has a lovely round creaminess with lingering blue overtones. Perl Las is made by hand and it is this which ensures the a creamy loose texture that creates natural spaces to enable the blue to grow. Inadvertently created when mature Caerfilli cheeses had become naturally blue, Carwyn and Susanna managed to recreate the conditions to generate this unique cheese . It is matured to encourage softening and the development of flavour.
