Named after the place where it was sold rather than produced Stilton has graced British tables since the 18th century. Both blue and white stilton have been awarded Protected Designations of Origin (PDO). Today Stilton can only be made in the adjoining counties of Nottinghamshire, Leicestershire and Derbyshire.
