Wine Match: A comprehensive answer from Damian Allsop "Champagne!! The lightness and freshness reflects our chocolates and goes well with the fruity ones. It is also a perfect match for Criollos- acidity, fruit and light hazelnut from the criollo beans harmonizes with acid/ fruit and nougat/toasted brioche center to most champers.
For the Dark ones I'd go for a young red, something like Amarone.- the acidity and fruitiness match most trinitarios (madagscan and meso-american beans). Or a double malt beer is also suitable for the forestero chocolate from Africa.
There are also some interesting white wine matches - a good Verdejo goes well with Pacari Raw and an Albariño goes well with cheap chocolate, scented with vanilla,(cacao barry/callebaut) and actually makes it quite pleasant!!"
