Organic salmon fillets from the Outer Hebrides are dry cured in salt before a mixture of heather honey and thyme is gently rubbed on. The fillets are then delivcately hot smoked to keep them moist and tender.Founded and run by Michael & Debbie Leviseur, The Smokeyard is affiliated to Loch Duart – the first-ever Freedom Food approved salmon farm which is famous throughout the world for its sustainable approach to farming and great tasting fish. The salmon used to produce this recipe comes from the Loch Duart sea sites - one of which is right next to the smokehouse. The product is handcrafted in small batches for assured quality and you can be sure that each mouthful will delight.
