Made with pasteurised Organic Cow's milk from the cows on the farm this full fat hard cows milk cheese is cold smoked over locally sourced oak shavings for between 12-24 hours to develop a smoky flavour. The resulting cheese is lightly smoked -golden brown in colour- and has a smell and taste reminiscent of the mists of Autumn. Made with vegetarian rennet.
