The York is the quintessential English ham. This is the ham that used to grace every farmhouse table in the good old days.

Size Guide:
Half Hams: min 2.6kg                               (Approx 30-35 generous slices)
Small Whole Hams: min 4.8kg               (Approx 55-60 generous slices)
Whole Hams: min 5.7kg                           (Approx 65-70 generous slices)

Sadly nowadays the need for food to be processed quickly has meant that ham of this quality is no longer readily available. Dry cured and matured over a period of at least ten weeks, it develops a wonderful flavour and a firm yet succulent texture. The curing process means that the York is somewhat drier and saltier than the Wiltshire ham.
