Dry cured and matured over a period of three months the York develops a wonderful depth of flavour reminiscent of ham from days gone by. The dry curing process means that the York is somewhat drier and saltier than the Wiltshire. Perfect with a good strong English mustard,

Dukeshill were awarded the Royal Warrant in 2003 to supply hams to the Queen.

Each sliced pack gives 2-3 generous servings. Please note that due to the slices being taken from a real ham the slices may vary.

Our best-selling ham is made using a traditional method of immersing the pork leg in brine for several days to develop a moist texture. The addition of unrefined brown sugar then gives the Wiltshire a subtle sweetness. Simply outstanding artisan ham at its finest!Like the York this is a dry cured ham. What sets it apart and gives the ham its distinctive black rind is a fortnight spent wallowing in a special marinade of molasses juniper and spices.

The Shropshire Black is unique. Made exclusively by Dukeshill to a recipe created by Lord Bradenham back in 1781. Like the York this is a dry cured ham but with a special twist

The Wiltshire is cured by immersion in brine for several days giving it a moist (but never wet!) texture. The addition of unrefined brown sugar to the recipe adds a subtle sweetness to this mild & delicious ham. Minimum weight 900g.

Nominated for 2009 Best New British Product and is delicious as a starter or wrapped around chicken and baked in the oven.

These hams are cured in exactly the same way as the Wiltshire (immersed in brine and then coated with unrefined brown sugar) but then lightly smoked giving them a delightfully distinctive flavour.

Richard Woodall was the first and for a long time the only company to produce a proscuitto style ham on a commercial scale in this country.
